Take a clean pan and add suffcient water , boil it on a stove. Then add 2 spoons 'chai patthi'(amount of chai patti depends on amount of water added). Add Milk and sugar and then serve it.

Aurangzeb is believed to have invaded the South and installed the Nizam-ul-mulk who later as the Asfa Jahi ruler became the Nizam of Hyderabad.

That explains the movement of the Biryani down south. From the Nizam's kitchen originated the }Hyderabadi Biryani and the delicacies that go with it like the Mirchi ka Salan, Dhanshak and Baghare Baingan.

It is not difficult to imagine that the repertoire included 26 types because the Hyderabadi Biryani itself is made in different styles -- Katchi Biryani, where the meat is marinated in curd and then steamed with rice, and the Pakki Biryani, where the meat is cooked with all the accompanying spices and then the rice is simmered with the resultant gravy redolent of mace, ittar and kewra in a sealed handi with saffron and cardamom.

The Vegetable Biryani is the 'tarkari' version, which was originally made for the cashiers and financiers of the Nawabs, who were Mahajan Hindus. The Hyderabadi version of the mixed Vegetable Biryani is the Tahiri.

Marriages between the families of the Nizams of Hyderabad and the Nawab of Arcot explains the journey of the biryani into what is called Arcot Biryani, another distinct type of biryani, which is made with smaller grains of rice.

Mutton chops:
(my grandma use to prepare it so yummy!I miss u nani!:-( )

-Cook mutton chops with ginger garlic paste, haldi, salt and red chilly powder, in cooker.
- Heat oil and add chopped onions (lengthwise chop cheyyali).saute till the onions are translucent.
- Add the mutton chops and garam masala.
- Fry on low flame for 30mts.
- Finally add pepper powder and cilantro.

Hyd dishes lo pepper and fried onions play a major role. :-)

Hydi Raitha (curd chutney): This goes well with chicken biryani!

-heat oil, add tempering (jeera n rai and red chillies)
- Add chopped green chillies, kadi patta, chopped onions. Saute till onions are brown.
-Then add chopped tomatoes, salt, haldi.
- Cook till oil separates or the gravy is thick.
-Cool and add curds n chopped cilantro.

Hydi Chicken/Lamb biryani!

-Marinate meat in ginger garlic paste, green chillies, mint n coriander paste, curds/sourcream and salt.
-Half cook rice with little oil, whole garam masala, lemon juice and salt. Spread it on a platter.
- Heat oil and add cashew and red chilly paste. Then add the marinated meat.Cook with covered lid for 10mts.
- Add fried onions and garam masala. Cook till oil separates.

Take a Bakeware dish and grease it.
Make a layer of rice, then make a layer of cooked meat.
Follow by chopped mint and cilantro and fried onions.
Lastly cover with a layer of rice.
Sprinkle saffron soaked in milk.
cover the dish with foil and bake for 30mts at 400 degrees temp.
Garnish with fried dry fruits,fried onions and chopped cilantro.

HYDERABADI BIRYANI:

basmati rice ni 20 mins water lo soak chesi drain cheyyandi. ippudu oka ginne lo medium heat lo ghee esi dantlo garam masala vesi fry ayyaka rice ni add chesi kasepu malli fry chesi dantlo water and salt vesi manchiga udikaka pakkana petti cool cheyyandi.

ippudu aloo ni manchiga pieces cut chesukondi. ippudu malli ghee ni heat chesi popesi, ginger garlic paste, podugga cut chesina green chillies , esi tomatoes fry cheyyandi
fry ayyaka aloo veyandi. aloo boil ayitunte koncham perugu esi ghee separate ayyenta varaku heat lo pettandi. dantlo kothimeera pudina vesi gravy thick ayyetattu heat lo pettandi.
ippudu koncham rice teesukoni oka bakable dish lo layer ga vesi dani paina curry veyyandi
malli curry paina rice rice paina curry ala 3 layers form cheyyandi.
chesaka aluminum foil to cover chesi 250 degrees preheated oven lo 20-30 mins bake cheyyandi
taravata teesi dani paina cashews, boiled eggs vesi mix cheyyandi.
idi mirchi ka salan, dahi ki chutney and shorwa to tinte baguntundi
